Recipe Tip of The Week

Berry Hand Pies

Ingredients

For the Crust:

  • 2 cups all-purpose flour, plus more for dusting
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon baking powder
  • 1 stick cold unsalted butter, cut into small pieces
  • 2 tablespoons cold vegetable shortening
  • 4 to 6 tablespoons ice water

 

For the Filling and Glaze:

  • 1 cup blueberries
  • 1 cup raspberries
  • 1/2 cup chopped strawberries
  • 1/4 cup granulated sugar
  • 1/4 teaspoon ground cardamom
  • Pinch of kosher salt
  • 1 tablespoon plus 2 to 3 teaspoons water
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lime juice
  • 1 large egg, lightly beaten
  • 3/4 cup confectioners’ sugar

 

Special Equipment: 6-quart air fryer

 

Directions

Make the Crust:

  1. In a mixing bowl, whisk together the flour, granulated sugar, salt, and baking powder.
  2. Add half of the butter and all the shortening. Rub them into the flour mixture with your fingers until the shortening is fully incorporated.
  3. Add the remaining butter and work it in until the pieces are about the size of peas.
  4. Using a fork, mix in 4 tablespoons of ice water. Add up to 2 more tablespoons, a little at a time, until the dough holds together when squeezed.
  5. Transfer the dough onto a sheet of plastic wrap. Knead it a few times, then shape it into a disk. Wrap and refrigerate for about 2 hours, or until firm.

 

Make the Filling:

  1. In a saucepan over medium heat, combine the berries, granulated sugar, cardamom, salt, and 1 tablespoon of water. Stir until the berries release their juices and the mixture comes to a simmer.
  2. Continue cooking, stirring often, until the mixture thickens—about 10 minutes.
  3. In a small bowl, whisk together the cornstarch and lime juice, then stir it into the berry mixture.
  4. Cook for another 30 seconds until the filling becomes glossy. Remove from heat and let it cool, stirring occasionally.

 

Assemble the Hand Pies:

  1. Divide the chilled dough into 8 equal pieces.
  2. Working with one piece at a time, roll the dough into a ball, then flatten it on a lightly floured surface. Roll it out into a 6-inch round, dusting with flour as needed.
  3. Place 2 tablespoons of the berry filling in the center. Brush the edges with beaten egg, then fold the dough over to form a semicircle.
  4. Fold and crimp the edge to seal. Repeat with the remaining dough and filling.
  5. Place the assembled pies in the refrigerator while you finish making the rest.

 

Cook:

  1. Preheat your air fryer to 350°F.
  2. Brush each pie with the beaten egg and cut two small slits in the top for steam to escape.
  3. Working in batches, place the pies in the air fryer basket. Cook for 15 to 18 minutes, or until golden brown.
  4. Transfer the cooked pies to a wire rack to cool.

 

Make the Glaze:

  1. In a small bowl, whisk the confectioners’ sugar with 2 to 3 teaspoons of water until smooth.
  2. Drizzle the glaze over the cooled hand pies before serving.
